Vineyard and Winery History

 
Founded in 2001, our little vineyard is growing very quickly!  We currently
have 10 vines that are producing a wonderful American grape called Moore's Diamond.  In the spring of 2009, we will be planting an additional 80 vines.  You

The name comes from my ladies; Lisa Gail and Samantha Gail Perakslis
 
Winemaking is a family hobby for us and all three of us have our jobs.  Eric
manages the vineyard and Lisa and Sammy help with watering, weeding,
chasing critters and canopy management.  Sammy is esecially good at picking
flowers.

Getting up early to harvest the grapes while they are still cool from the night.
 
In order to not burden the vines too much, we thinned out the grape clusters to
produce a light crop.  the yield was just under 50 pounds once the bad berries
and stems were removed.
 
Next it was time to crush....the old fashioned way!
 
 
After crushing, the juice is stabilized and then passed on to our homemade wine press for pressing.
 
 
From there it goes into the primary fermentation tank with the yeast and wine
happens!
 
After a week or so, the wine is racked (siphoned) out of the stainless steel primary
fermentor and into glass for a secondary fermentation. 
 
 
 
Not too pretty is it?  It clears quickly once the secondary fermentation is complete as it is racked off the lees (sediment) and into a fresh glass carboy to age a bit.
 
 
After secondary fermentation and one additional racking, the wine is much more clear.
 
 
 
The next step is to cold stabilize the wine.
